So here’s the real question: do I try to write this game (which needs websocket and fancy multi user frontend support) in Elixir/Phoenix (more stuff done out of the box) or do I try doing it in Rust (more hand rolling, but I like Rust more)

I think CS academics are asking the wrong question when they ask "what does industry want?".

Instead, they should talk to staff+ software engineers, who have done mentorship work, and ask them about what skills are important. I suspect they'll get widely different answers.
